Last night, I made a gluten-free, vegan cornbread.  My husband likes his cornbread and usually uses a mix, but I'm more of a make it from scratch sort of girl, so I found a recipe in a trusted vegan baking book I have and it turned out so great!  I put corn nibblets in there, which gave it a lot of sweetness and it was very moist.  I'm definitely making this one again.  My husband loved it and it will definitely make it to our dinner table again.
