This is one of my favorite loaf desserts. Instead of doing the gluten-free vegan thing, I decided to use an all purpose flour, eggs, and butter (well, actually vegan butter, but it serves the same purpose). I baked it for an hour and it came out perfectly. It's cooking on the counter now. I'm tempted to try to take it out of the pan, but the last time I did something like that when it was too warm, it came all apart. I'm not going to make that mistake this time.
